This meal will introduce you to some amazingly lesser known dishes of Bihar. Chandana is a cook par excellence and will be cooking a spread consisting of authentic Bihari dishes like Litti Chokha, Kachri, Dehati Gosht and a lot more. The meal will be served on a traditional patal leaf as is done traditionally. So come and savour the real taste of Bihar!

WELCOME DRINK
# AAM JHORA
A refreshing drink from Bihar made with raw mangoes, black salt, jeera powder and pudina leaves

COMMON DISHES
# KACHRI
A special Channa dal pakoda from the province of Mithlanchal in Bihar. Channa dal is soaked overnight, coarsely ground and mixed with coriander leaves, green chilli, pepper, ginger and garlic. Served with grated radish and spicy tangy chutney (TANAKA)

# LITTI CHOKHA
How can we do a Bihari meal without these. These are wheat balls with a stuffing of sattu (roasted gram flour), mixed with finely chopped green spices and lemon juice, cooked on low fire and served with tangy tomatoes and baigan ka bharta (chokha), both of which are roasted and made in mustard oil

# PLAIN RICE
Fluffy long grains of steamed rice

# MATAR BHARA KACHORI
The most exquisite matar stuffed kachori. These are only found in Magadh and excellent to have just on their own!

VEGETARIAN DISHES
# BESAN KI MACHLI
A traditional dish of Bihar, totally vegetarian, made out of besan omelette. The curry is made with spices and mustard seed

# BAINGAN KALAUNJI
This dish is made with small brinjals, slit into four, cooked on slow fire with panch phoran and tomatoes to get a succulent taste

NON VEGETARIAN DISHES
# KACCHA KEBAB
Double mince chicken kheema, marinated overnight in Chandana’s mothers secret green spices, made into small rolls and shallow fried

# DEHATI GOSHT
This is a village preparation of mouth-watering mutton marinated for 48 hours with fresh masala paste made on silauti (silbatta). This is then cooked on slow fire for over 2 hours to a succulent smoked charcoal taste

# BHAAP WALI SARSON MACHLI
Fish marinated for 24 hours in salt, turmeric and lemon juice. It is then steamed in mustard, green chilli and other secret spices. It goes very well both with matar bhari kachori and plain rice
